iPhone Backup Decoder is a free and open-source Python script that is able to extract the iPhone backup files that are stored on your Mac's drive.

By default, some of the iPhone files are automatically backed up on your Mac by iTunes when you connect your phone to your Mac. The iPhone Backup Decoder script is designed to find and provide access to those files, so you can do what you want with them.

All you need to do is to create a copy of your ~/Library/Application Support/MobileSync/Backup/ folder and run the script against the *.mdbackup files. After that, the script creates a "MobileSyncExport" folder that includes the backup files.

MobileSyncExport contains SQLite databases and plist files, so you should know what they are before using this script.
