PDF Toolkit is an easy to use software that allows you to manipulate PDF files: merging multiples files into one, splitting one big file into smaller ones, extracting pages, extracting plain text.
The key point of the app is efficiency: the interface is simple and unobtrusive, you drag your files onto the window and perform the action of your choice.
Regarding the text extraction feature: it extract plain text into a unformatted .txt file. It does not perform OCR, and can only extract text present as such in the PDF (it won't deal with images, for example).
NOTE: To buy PDF Toolkit via the App Store an Apple account is required.
